Creamy Tomato Mushroom Orzo with Hot Italian Sausage

Your Ingredient Log:
4 Hot Italian sausage links
¾ cup dry Orzo
1 tbsp Tomato paste
1 pack Brown button mushrooms, sliced
¼ cup Brut (dry sparkling wine) to deglaze the pan
Water + 1 tsp Chicken bouillon (to boil and cook the orzo)
Blended Cream Sauce Base: ½ cup Kirkland high-protein milk, ¼ cup heavy cream, and ½ cup cottage cheese (blended until smooth)
½ cup Parmesan cheese

The Efficiency Win: Cooking the dry orzo directly in the sausage fat toasts the pasta slightly, adding depth while eliminating the need for an extra pot.
The Protein Hack: Blending the cottage cheese with high-protein milk gives you the velvety mouthfeel of a traditional cream sauce while packing an excellent protein punch per serving.
What to do:
Remove the sausage from its casings. Heat a large skillet over medium-high heat. Add the sausage, breaking it up with a wooden spoon until browned and cooked through (about 5–7 minutes). Use a slotted spoon to transfer the sausage to a plate, leaving about 1 tablespoon of the rendered fat in the pan.
Add the sliced mushrooms to the same skillet. Let them sear undisturbed for 2–3 minutes to get a nice brown crust, then stir and cook until softened. Transfer them to the plate with the sausage.
Stir in the tomato paste. Cook it for 1–2 minutes, moving it around the pan, until it turns a deep brick-red color. This "toasting" step removes the raw metallic taste and unlocks the deep umami flavor.
Pour in the brut, using your spoon to scrape up all the flavorful, browned bits (fond) stuck to the bottom of the pan. Let the liquid simmer and reduce by half (about 2 minutes).
Add the dry orzo directly to the skillet. Stir it continuously for 1–2 minutes to let the grains absorb the aromatics and lightly toast.
Pour in 1 cup of water and the chicken bouillon, bring mixture to a boil, then reduce the heat to medium-low, cover, and let it simmer for 8–10 minutes, stirring occasionally so the orzo doesn't stick. The orzo is ready when it is tender and most of the liquid is absorbed.
Turn the heat down to low. Stir the cooked sausage and mushrooms back into the skillet.
In a blender or food processor, combine the cottage cheese, heavy cream, and high-protein milk. Blend on high until completely smooth and liquefied, with no remaining curds. Add this to the pan. Stir to incorporate
Add the Parmesan cheese and stir until melted.
Reheat Notes:
Cover and heat in the microwave for 30-45 secs. Mix and repeat until fully hot.
